Chocolate Java Cookies

These are by far the best cookies I've ever made- you've gotta try them! 
They are really pretty too- fun to serve to guests!


 Chocolate Java Cookies
2 tablespoons instant coffee granules
1 tablespoon milk
1 cup butter, softened
2/3 cup sugar
2/3 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 cup baking cocoa
1/2 cup chopped walnuts
1/2 cup miniature semisweet chocolate chops

In a small cup, mix coffee granules and milk; set aside.  In a large bowl, cream the butter, sugar, and brown sugar until light and fluffy.  Beat in the egg, vanilla, and reserved coffee mixture.  Combine flour, baking soda, and salt; gradually add to creamed mixture and mix well.  

Divide dough in half.  To one portion add the cocoa and walnuts.  To the other portion add the chocolate chips.  

To form cookies, place 1 tablespoon of each dough side by side and make a ball.  Place on ungreased baking sheet and flatten cookie lightly.  Repeat with remaining dough.  

Bake at 375 degrees for 8 minutes. Cool for 1 minute before removing from pans to wire racks.  




They are great with hot chocolate or coffee and you can even make them into a heart shape.  

If you don't want to take the time to make two separate batters for the two tone cookie, they taste just as good with everything mixed together.
