Feta Stuffed Mushrooms

Mmmmm... these are so good!

Feta Stuffed Mushrooms

1 pound white mushrooms (the bigger the better)
1 package Feta cheese
1 roasted sweet red pepper, chopped
olive oil

Remove steams from mushrooms.  Place mushroom caps on a rack in a shallow roasting pan and fill each one with a spoonful of feta cheese.  Top each with some red pepper pieces.  Sprinkle with pepper, drizzle with a little oil.  Bake at 350 degrees for 15 to 20 minutes or until mushrooms are tender and cheese is melted.
