Cheese Stuffed Jalapenos with Bacon

This is one of my favorite appetizer recipes for serving when our friends or family come to visit.    


8 large jalapeno peppers
4 oz cream cheese, softened
1/2 cup shredded cheddar cheese
1 teaspoon cajun seasoning
8 thick-sliced peppered bacon strips, cut in half


Wearing gloves, cut jalapenos in half lengthwise.  Remove seeds.  Combine cream cheese, cheddar cheese, and cajun seasoning.  Spoon cheese mixture into jalapeno halves.  Cook bacon until just partially cooked.  Lay a piece of bacon on top of each pepper half.   Place on a wire rack in a shallow baking pan.  Bake uncovered at 350 degrees for 25 to 30 minutes or until bacon is crisp.  Serve immediately.
